Food truck takes Peanut Butter to new level

When it came time to move back home to Omaha after years in Dallas, John Jelinek decided to get trucking. In full gear, he thought, start a business, a restaurant. But what was a food that everyone liked?

"It was one of those things we just had as kids," he said.

The idea for Peanut Butter Johnny's was born. This isn't your mother's jiff though, this skippy is stepped up.

Elevated spreads, emril'ed up a notch if you will is the item feature. Jelinek and his team grind and  crunch all their nut butters in the kitchen, adding them to sandwiches and burgers. They also have a fig and jalapeno jam from the Grey Plume.

There's some tastes you might expect, on the menu, that would excite your inner Elvis. Like the sandwich combing PB with flavors like banana, bacon, marshmallow fluff. There's some surprises too like the 'Chicken it Out,' their best seller. It has honey roasted cashew butter, havarti cheese, grilled chicken breast, and honey lime aoili.

"What's interesting is after we started it, we found out there are others, about 3 others in the country," Jelinek said.

It brings you back to his childhood. Even if Jelinek's childhood go to isn't on the menu.

"One of our weird things was peanut butter and lettuce. We're not having that on the truck," he said, laughing.
