ELKHORN, Neb. (KMTV) — It's a big day today. Not only is it Taco Tuesday, but it's Cinco de Mayo and Takeout Tuesday. So if you're thinking of ordering out today, Maximo's Cantina in Elkhorn is open.
You don't ever really need a holiday to eat at Maximo's Cantina. Their house margaritas and assortment of Mexican dishes is reason enough.
"The owner is the chef. Max, and he is from Oaxaca, Mexico," said manager Deb Taylor. "He has some nice recipes from his hometown, so the Mexican fare is not TexMex. It's authentic."
Since COVID-19, they had to adapt to stay in business.
"We've had to advertise a little bit outside of our area to help keep it flowing, and everybody has been really good to us," Taylor said.
Most of their staff is still employed, but some employees aren't coming in due to health concerns. They shut down dine-in service for weeks. and cranked up their sanitizing like most businesses have.
Now that restaurants can re-open their dine in option, Maximo's is, but with restrictions.
All employees will be wearing masks, and their temperature will be taken before their shifts. They've also marked the floors and their tables inside and on their patio to keep customers at least six feet apart.
"We're going do a thing different with the payments. Instead of the server taking payment at the table, we're going to direct them to the bar so just one person is dealing with cash and credit cards," said Taylor.
Maximo's was also a popular place to celebrate Cinco de Mayo, with performers and live music provided in past years. This year, the restaurant is keeping it low key.
"We had mariachis lined up - we're just going to push it back when people can enjoy it, because people won't be able to sit here for very long," said Taylor. "The directives are very strict. You can have a cocktail with your meal, but that's it. There's no sitting around and drinking, you can't drink at the bar, you can't eat at the bar, it's all very strict."
