BELLEVUE, Neb (KMTV) — A Bellevue barbecue restaurant that says its finger-licking good ribs will keep you coming back for more.
The sign along Mission Street in Old Town Bellevue is hard to miss.
It's the home of the Swine Dining restaurant where barbecue is king.
Inside, the smoker is filled with the restaurant's signature ribs.
It's a process.
Most of the meat gets prepped the day before.
The ribs are smothered with sauce before they go in the smoker and again hours later once they're done.
"I think they're the best thing we have," said Tyler Sorenson.
He should know.
He's the owner at Swine Dining where there are two rib styles: traditional and bourbon.
"We only do a few of those (bourbon) every week. Personally, they are my favorite ribs. I like them because they're different but they are considerably sweeter than regular ribs," he added.
No matter what kind you choose - the secret behind their barbecue is the same.
"I think it's the rub that we make and then patience," Sorenson said. "Not rushing any of it. If it's not ready when you're open - I just have to tell people you have to wait a little bit."
It's not just about the barbecue at Swine Dining. The smoked Mac and Cheese and the brisket Mac and Cheese are also really popular.
Customers also love the smoked beans and potato salad.
"I like the flavor of the barbecue and I love the brisket," said customer Joe Morris.
Although most orders are carry out these days, seeing customers after COVID-19 restrictions last year is refreshing.
"When it was really locked down there wasn't a lot to do. I brought in an Xbox. I spent a lot of time just waiting for customers by myself," Sorenson remembered.
Takeout Tuesdays helped.
"Tuesdays would go from being one of the slowest days to one of the busier days of the week," he explained.
